Ellington is a town located in Chautauqua County, New York. As of the 2000 census, the town had a total population of 1,639.
The Town of Ellington, on the east border of the county, was incorporated in 1824.

Geography
According to the United States Census Bureau, the town has a total area of 94.7 km² (36.6 mi²). 94.7 km² (36.6 mi²) of it is land and 0.03% is water.
Demographics
As of the census2 of 2000, there are 1,639 people, 568 households, and 440 families residing in the town. The population density is 17.3/km² (44.8/mi²). There are 636 housing units at an average density of 6.7/km² (17.4/mi²). The racial makeup of the town is 98.35% White, 0.18% African American, 0.67% Native American, 0.12% Asian, 0.00% Pacific Islander, 0.06% from other races, and 0.61% from two or more races. 0.61% of the population are Hispanic or Latino of any race.
There are 568 households out of which 36.3% have children under the age of 18 living with them, 66.9% are married couples living together, 6.9% have a female householder with no husband present, and 22.5% are non-families. 16.4% of all households are made up of individuals and 7.2% have someone living alone who is 65 years of age or older. The average household size is 2.88 and the average family size is 3.25.
In the town the population is spread out with 28.4% under the age of 18, 7.7% from 18 to 24, 29.5% from 25 to 44, 23.8% from 45 to 64, and 10.6% who are 65 years of age or older.
