Caton is a town located in Steuben County, New York, United States. As of the 2000 census, the town had a total population of 2,097. The town is named after Richard Caton.

History
Caton was formed in 1839 from the Town of Corning, then known as the Town of Painted Post.
Geography
The south town line is the border of Pennsylvania and the east town line is the border of Chemung County, New York.
According to the United States Census Bureau, the town has a total area of 98.3 km² (38.0 mi²). 97.9 km² (37.8 mi²) of it is land and 0.5 km² (0.2 mi²) of it is water. The total area is 0.47% water.
Demographics
As of the census2 of 2000, there are 2,097 people, 770 households, and 595 families residing in the town. The population density is 21.4/km² (55.5/mi²). There are 819 housing units at an average density of 8.4/km² (21.7/mi²). The racial makeup of the town is 97.90% White, 1.00% African American, 0.29% Native American, 0.10% Asian, 0.00% Pacific Islander, 0.24% from other races, and 0.48% from two or more races. 0.72% of the population are Hispanic or Latino of any race.
There are 770 households out of which 35.1% have children under the age of 18 living with them, 63.0% are married couples living together, 7.5% have a female householder with no husband present, and 22.6% are non-families. 17.1% of all households are made up of individuals and 6.5% have someone living alone who is 65 years of age or older. The average household size is 2.72 and the average family size is 3.03.
In the town the population is spread out with 27.3% under the age of 18, 7.0% from 18 to 24, 29.0% from 25 to 44, 27.6% from 45 to 64, and 9.1% who are 65 years of age or older. The median age is 37 years. For every 100 females there are 100.1 males. For every 100 females age 18 and over, there are 101.9 males.
The median income for a household in the town is $45,875, and the median income for a family is $50,052. Males have a median income of $33,594 versus $27,391 for females. The per capita income for the town is $19,612. 7.5% of the population and 6.1% of families are below the poverty line. Out of the total population, 8.5% of those under the age of 18 and 4.8% of those 65 and older are living below the poverty line.
The 1890 population was 1,445.
