Canisteo is a town located in Steuben County, New York, United States. As of the 2000 census, the town had a total population of 3,583.
The Town of Canisteo is in the southwest part of the county. The village named Canisteo is inside the town.

History
The town was formed in 1796 at the time of the creation of the county and is one of its original towns.
Geography
The Canisteo River flows through the town.
According to the United States Census Bureau, the town has a total area of 140.8 km² (54.4 mi²). None of the area is covered with water.
Demographics
As of the census2 of 2000, there are 3,583 people, 1,423 households, and 980 families residing in the town. The population density is 25.4/km² (65.9/mi²). There are 1,704 housing units at an average density of 12.1/km² (31.3/mi²). The racial makeup of the town is 98.24% White, 0.20% Black or African American, 0.17% Native American, 0.53% Asian, 0.00% Pacific Islander, 0.25% from other races, and 0.61% from two or more races. 0.84% of the population are Hispanic or Latino of any race.
There are 1,423 households out of which 30.6% have children under the age of 18 living with them, 54.5% are married couples living together, 9.1% have a female householder with no husband present, and 31.1% are non-families. 26.8% of all households are made up of individuals and 13.6% have someone living alone who is 65 years of age or older. The average household size is 2.52 and the average family size is 3.04.
In the town the population is spread out with 26.2% under the age of 18, 7.7% from 18 to 24, 24.9% from 25 to 44, 25.8% from 45 to 64, and 15.4% who are 65 years of age or older. The median age is 39 years. For every 100 females there are 93.9 males. For every 100 females age 18 and over, there are 91.2 males.
The median income for a household in the town is $35,308, and the median income for a family is $41,859. Males have a median income of $32,225 versus $20,192 for females. The per capita income for the town is $15,162. 11.6% of the population and 8.8% of families are below the poverty line. Out of the total population, 11.9% of those under the age of 18 and 2.3% of those 65 and older are living below the poverty line.
