All known public wikis are listed at WorldWideWiki: SwitchWiki (http://www.worldwidewiki.net/wiki/SwitchWiki), which lists about 1000 public wiki communities (as of June 12 2004).
The 30 largest wikis are listed at Meatball: Biggest wikis (http://www.usemod.com/cgi-bin/mb.pl?BiggestWiki#Biggest_wikis_by_page_count_on_July_3_2004).
One way of finding a wiki on some subject you are interested in is to follow the Wiki Node Network from wiki to wiki (see Wikipedia:WikiNode). Or you could take a Wiki bus tour.

Wiki bus tours
There are virtual guided "bus tours" taking visitors to various wiki sites. These consist simply of a page on each participating wiki called TourBusStop, which gives the link to the next bus stop -- basically, a type of web ring. Each bus stop page gives some info about that wiki, and one can choose to explore that particular wiki (thus "getting off the bus"), or continue to the next wiki in the tour.
