Kir Royale
|
The Kir Royale is a sparkling cocktail only containing two ingredients:
- Sparkling wine, Cava or Champagne mixed with
- Crème de Cassis, which is a blackcurrant liqueur,
at an approximate ratio of 5:1.
Place the liqueur at the bottom of a champagne flute and add the other ingredient.
A variant recipe uses the raspberry-flavored Chambord instead of Crème de Cassis.
The kir is named after Félix Kir (1876-1968), a former mayor of Dijon in Burgundy.
The related cidre royal cocktail is made from cider (instead of champagne) and crème de cassis, plus a measure of calvados.
