Boza

Boza is a popular beverage in Bulgaria and Turkey. It is made from fermented maize in Turkey and wheat in Bulgaria. It has a thick consistency and a very low alcohol content.
It is served with cinnamon and roasted chickpeas, and is consumed mainly in the winter months in Turkey. In Bulgaria is part of the tarditional Banitsa with Boza breakfast.
The most famous purveyor of Boza is "Vefa", located on the European side of Istanbul. The shop is now a minor tourist attraction.
