Red curry

Red curry (Thai แกงเพ็ด Gaeng Ped) (lit: spicy curry) is a popular Thai dish consisting of a coconut milk base, which is mixed with red curry paste, Thai chillies, fish sauce, kaffir lime leaves, eggplant and usually a meat such as chicken, beef, pork or shrimp. Tofu is also used as a substitute for meat.
Although recipes vary by locale, this dish normally has a thick, soup-like consistancy and is served in a bowl with a side of rice. In Thailand, red curry is usually always cooked with Thai eggplant, but can be substituted with eggplant or omitted alltogether.
