Maraschino cherry

Maraschino cherries are cherries that have been marinated in food colouring, sugar syrup, sometimes alcohol, and flavouring. Cherries dyed red are typically flavoured with almond, and cherries dyed green are typically flavoured with mint. They are often dipped in chocolate to make liqueur cherries, used as a garnish on top of desserts such as parfait or ice cream sundaes, or used in cocktails such as the Manhattan.
They have no connection to the liqueur called maraschino, other than a historical one. At one time, maraschino cherries were marinated in maraschino; in modern times, almond-flavoured sugar syrup has been substituted.
