Leipäjuusto ('bread cheese') is a fresh, hard cheese made from cow's milk, originating from Northern Finland and Kainuu. Leipäjuusto is baked, grilled or flambéed to give it its distinctive brown or charred marks. In Ostrobothnia, leipäjuusto is called juustoleipä.
Leipäjuusto can also be eaten as dried. Fresh cheese is naturally dried for a few days in an airy place. Fresh or dried leipäjuusto is sometimes put in a cup, and coffee is poured over it. Another common way to eat leipäjuusto is with cloudberries. Leipäjuusto can be eaten warm or cold.
