Taxonomy
A note on the taxonomy of leeks, elephant garlic and kurrat. While these are treated as separate species in older literature, I am following taxonomists who regard them as cultivars of Allium ampeloprasum, much as cabbage, broccoli, cauliflower, collards etc. are cultivars of Brassica oleracea. Green/spring onions
Isn't a scallion (green/spring onion) the same thing as a leek? Or is it some kind of a leek?
